Bahan Membuat Brongkos

  1. 300 kg daging tetelan, rebus sampai empuk trus potong kecil².
  2. 8 bh tahu berkulit (aku potong lagi uk 3x3cm, sesuai selera aja).
  3. 400 gr buncis. Potong².
  4. 2 bh kluwek, rendam dg air panas.
  5. Bumbu halus:.
  6. 8 bh cabe merah, rebus.
  7. 2 bh kencur uk 3-4 cm.
  8. 7 bh bawang merah.
  9. 5 bh bawang putih.
  10. 3 lbr daun jeruk.
  11. 3-4 cm jahe digeprek.
  12. 2 cm laos.
  13. 2 lbr daun salam.
  14. 1 bh sereh.
  15. 400 ml air kaldu sisa rebusan daging tetelan.
  16. 1000 L air.
  17. 100 ml santan kara.
  18. Minyak utk menumis.
  19. Garam.
  20. Gula.
  21. Kaldu jamur.

Langkah Memasak Brongkos

  1. Tumis bumbu halus dg sedikit minyak, tambahkan laos, salam, sereh, jahe dan juga kluwek sampai harum.
  2. Masukkan daging dan kaldu serta air. Masak sampai mendidih.
  3. Selanjutnya masukkan buncis. Aduk2. Jika buncis sudah setengah matang masukkan tahu. Tambahkan garam, gula, kaldu bubuk.. Note: bisa ditambahkan potongan cabe rawit bagi yg suka pedas.
  4. Terakhir masukkan santan. Aduk rata dan masak hingga matang sambil sesekali diaduk. Tes rasa daan... selesai, brongkos siap disajikan 😊.
