This Japanese-style udon soup recipe uses several Asian ingredients that are available at most grocery stores, including udon noodles, mirin (cooking wine), miso, and sesame oil. All will keep for months in the pantry or fridge. Thick and satisfying udon noodles, sautéed chewy shiitake mushrooms, juicy bok choy (one of my most favourite greens), and soft tofu cubes all swimming in a gorgeous miso broth. Miso soup is usually seen in Japanese restaurants as an opener to the meal, but in this version, we make it hearty enough to be the main dish. Onions, napa cabbage, and dried shiitake mushrooms are simmered with white miso, then ladled over thick udon noodles.
